Pestop’s idea for producing Genoese pesto with an automated mortar and pestle, supported by Start 4.0.

Pestop, an innovative company active in the food sector, has launched a Test Before Invest project with Start 4.0 aimed at developing an intelligent device for the automated production of pesto, connected to an external platform for monitoring and analyzing process data.
The service, funded by the PNRR – Next Generation EU, accompanied the company in defining the technological and functional requirements and in the prototyping of a highly innovative Minimum Viable Product (MVP).

The intervention involved a path structured in five phases, which includes the analysis of Industry 4.0 requirements, the scouting and selection of hardware and software technologies, the creation of the prototype, its validation in a real environment and optimization for future developments.
Particular attention was paid to process automation, interoperability, food quality and traceability, remote management and data security.

Thanks to the support of Start 4.0, Pestop was able to test and validate the technologies best suited to its industrial evolution, reducing the risks associated with the investment and building a solid base for growth.
A project that demonstrates how even a small business can integrate smart and digital solutions to make food production more efficient, safe and sustainable.
